We love quick, healthy snacks around here. Several months ago my MIL brought some homemade crackers when they came to visit us. They were yummy and tasted similar to Wheat Thins, so naturally I asked for the recipe. Even though sometimes it’s easier to pick up a box of something at the store I love making things at home with no preservative, plus I get to involve A in helping me make the goodies. If you’ve been around here for long you know that sweet girl loves to help me in the kitchen. Anyways, when I made them for us, we made a couple small changes to the recipe and they were a hit for our family. Seriously, they lasted maaaaybe a week here. All of us enjoyed them too. So, today I wanted to share the recipe with you because they are super easy and just that yummy!


- 1.5 c rolled oats
- 1 c wheat flour
- 1.5 tsp salt
- 1/2 c water or milk (we've done both ways)
- 5 TBSP oil
- 1/2 tsp baking powder
- Preheat oven to 350*
- In the food processor, pour in oats and process until it becomes a flour-like meal.
- Add oat flour to the flour and salt. Then add in the wet ingredients.
- Once the mixture becomes a soft dough roll out the dough to be about 1/8". I roll mine out on my silicone mat so can cut down the sheet of dough to fit perfectly on my mat. Then I add the extra dough to pan number two.
- Once the dough is about 1/8" gently scout the dough by gently cutting it but not all the way though. A pizza wheel cutter works great for this!
- Bake in the oven for 10-12 minutes. It should be a nice light brown color. Remove from the oven and let cool. Once cool, break the scores pieces. Some may separate when they bake but most will still be in one sheet.
- Serve with your choice of dip or hummus, or eat by themselves!
- Keep in an airtight container for up to two weeks (if they last that long they don't here!)
