Apple Chip Cake

The weather here lately has been a little taste of Autumn. Cool mornings, warm afternoons and chilly evenings. This week has been extra cool and delightful. I know that it’s temporary but it’s enough to make me crave the Fall in the coming months. For a long time apple was what I thought of when I thought of Fall instead of the typical pumpkin flavors most do. I think of apple picking, warm apple cider and apple pie. Yum. With our little taste of fall around here these days, I wanted to share a recipe we enjoy around our house. It’s lovely as breakfast with your coffee or anytime really.AppleChipCake

Ingredients
  1. 1/4 cup of oil
  2. 2 cups of white sugar
  3. 2 eggs
  4. 3 cups flour
  5. 1 teaspoon of vanilla
  6. 1/2 teaspoon of salt
  7. 1 teaspoon of baking soda
  8. 1 tablespoon of cinnamon
  9. 1/2 cup of nuts (optional)
  10. 3 to 4 chopped apples with peels
Instructions
  1. Cream together oil, white sugar, eggs and vanilla.
  2. Add flour, salt, baking soda, cinnamon and nuts (optional)
  3. Fold in your chopped apples
  4. Dough is going to be stiff. Press dough firmly into 9 x 13 pan.
  5. Bake at 350° for 40-45 minutes
  6. Let cool

I always cut up more apples than necessary because my little helper always sneaks a few while we are making our Apple Chip Cake. We’ve made them both as muffins and as a “cake” – both do work but we’ve found that we like it better as a cake, it seems more moist. Once we have let it cool we always add a layer of saran wrap to the pan for storage and overnight it traps in the moisture and make the top a little tacky and delicious. So yummy!
