Thai Noodle Soup

We love trying new recipes in our house and have a love for all kinds of cuisine. We cook at home every night so sometimes we are on the hunt for new awesome recipes to try. This soup is so yummy. I’m a “soup in the winter and maaaaybe autumn” kind of girl but living in Colorado we have some wiggle room on “winter” considering we got 8″ of snow randomly on Mother’s Day just a couple weeks ago. So sometimes I bend my silly “rules”.  Our daughter loves this meal too, which makes dinner even easier. She loves the noodles and letting her slice up the wontons with a pizza cutter is fun to keep her involved too!

Ingredients
  1. 1 Pound of Ground Turkey or Pork
  2. A Tablespoon of Oil
  3. 1/2 pound of sliced fresh mushrooms
  4. 1 heeping TBSP of minced garlic
  5. A bundle of green onions chopped
  6. 1 TBSP lime juice
  7. 4 TBSP soy sauce
  8. Ginger Powder - or freshly minced if you have it
  9. Half package of wontons cut into long slices
  10. 6 cups water
  11. 3 Chicken Bouillon Cubes or 3 Teaspoons powder
  12. Note: You can also use 4 cups chicken broth & 2 cups water instead of the bouillion cubes & 6 cups water.
  13. Cilantro
  14. Red Pepper Flakes
Instructions
  1. Brown ground meat with oil, soy sauce, mushrooms, and garlic in stockpot.
  2. Add in green onions, ginger powder, lime juice, water and chicken bouillon and bring to a boil.
  3. Add in wonton slices and leave at a quiet boil for another 5 minutes.
  4. Serve topped with cilantro and red pepper flakes. For an extra level of flavor serve with a slice of lime.
