Scrumptious Blueberry Muffins

I’m pretty hit and miss on muffins, sometimes I love them…sometimes not so much. I’m very picky about flavor and texture, I want them light and flavorful. These are exactly that and a household favorite around here. So delicious!

Muffin Ingredients
  1. 1.5 c All Purpose Flour
  2. 3/4 c Sugar
  3. 1/3c Milk
  4. 1/3 c. softened butter (you can also use oil 1/3c)
  5. 1 egg
  6. 1tsp salt
  7. 2tsp baking powder
  8. 1 1/4c Fresh Blueberries
Topping Ingredients
  1. 1/3c. Flour
  2. 1/2c Brown Sugar
  3. 1/4c Softened Butter
  4. 1 Tbsp Cinnamon
Instructions
  1. Preheat the oven to 400*
  2. Mix dry ingredients: flour, sugar, salt and baking powder. Mix dry ingredients thoroughly to evenly distribute baking powder and salt.
  3. Add butter.
  4. Add wet ingredients: egg, oil and milk. Mix batter thoroughly.
  5. The batter will seem dense but once you add the blueberries the juiciness of the blueberries will add moisture to the batter. Mix batter well folding in blueberries. Don't be afraid to gently break up the blueberries into the batter.
  6. Spray muffin tins with Pam Baking spray (this stuff is my go-to), or use muffin liners. We make them as 6 large muffins and 9 mini muffins - if you would like to make all large muffins you will probably get around 9 muffins. Fill the tins to the top of each one. Bake for 18-22 minutes until lightly golden brown on the top.
