A couple weeks ago,
I was looking through my fridge, freezer and pantry
trying to figure out what to make for dinner.
Something I could just throw it in the crock pot let be.
So what did I find?
5 Frozen Chicken Breasts.
A Frozen Peppers & Onion mix.
1/2 an onion.
A Can of Rotel Tomatoes with Green Chilis.
And our seasoning collection.
What did I do with it?
Cut the frozen chicken into strips.
Threw in the Peppers & Onions mix.
Cut up the 1/2 onion.
Tossed in the block of cream cheese.
Took some large dollops of sour cream,
Added the Rotel.
and let them cook for a few hours.
I stirred it about once per hour.
A once the chicken, the peppers and onions, cream cheese, and sour cream had cooked a bit, the mixture was a little thin, and needed some more flavor.
So what did I do?
Added Paprika for Color.
Added Chili Powder for Spice.
Tossed in some Red Pepper Flakes.
Added Onion Powder.
And then some cornstarch to thicken.
It then looked like this.
I turned the crock pot down,
and let cook for the rest of the afternoon.
CROCK POT CHICKEN FAJITA TACOS WERE BORN!
And if this tells you anything, they got Ryan’s approval.

He then decided this “random concoction needed a name.
Yep – Crock Pot Chicken Fajita Tacos was the best name we could come up with.
Creative, I know!
They were great on hard or soft tacos.
The best part?
We had extra.
So we decided to freeze the rest for a second meal.
