Anniversary Weekend Recap

We spent our entire weekend celebrating our two year anniversary.  It was simple, and it was just what we needed.  I got my blog posts pre-posted, so I could step away for the weekend.  I was looking forward to the weekend all week, there was so much to celebrate. Although two years, isn’t that long, there has been so much to celebrate in our marriage this last year.

I ended up working for a few hours on Saturday, but there wasn’t any complaints – money is money.  We went home made some homemade spinach artichoke dip, and delicious shrimp scampi pasta, Sunday we woke up and headed to Winter Park & Fraser.

I went to Winter Park & Fraser all the time growing up, and I have always been fond of going.
Ryan had never been so it was an exciting trip for the both of us.  We went with the agenda of snowmobiling and tubing.  There wasn’t 2 feet of snow so the snowmobiling was out, but instead we drove around, Ryan took me to the YoungLife camp up there to show me where donate from time to time, and it’s a camp he went to growing up.

We ate dinner at a nice little Irish Pub with some stellar food, and then we hit the tubing hill. We had a great time tubing for an hour and a half, not mention my little wipe-out at the bottom of the hill – which was pretty hysterical.  The hill was the slowest I had ever seen it, maybe 8-10 people were there, then again it was a Sunday night. I wish we would have taken video or photos of going but it is probably best we didn’t because well…with my luck I would have had the camera when I wiped out, and trashed my phone or camera. ha. ha.

Monday, Ryan took the day off of work, and we made some stellar breakfast including these waffles (yes using canned flaky biscuits – honey butter in particular, which are amazing!), accompanied by eggs and bacon. YUM!.

Later that afternoon we went and got our wedding rings cleaned at Shane Co. (which by the way if you are in the market for jewelry and you have one near – go there! Love them.), and went to watch Real Steel, the movie about the fighting robots with Hugh Jackman.  Great movie.

Then it was dinner time.  We went to this little old steakhouse off the beaten path, with a high price tag than we would normally pay, but the food was fabulous.  It was so delicious, and somewhere we will go back to again!
Then we finished the evening by running by the Hyatt Place Hotel, the one by our house that we stayed on our wedding night but for what?
A cookie!
I had one of these Peanut Butter Chip cookies on our wedding night, and am thoroughly convinced they are the best cookies ever.  I’m making it a serious goal to figure out the recipe, even if I get a part time job there just long enough to snatch that recipe.  So, since that dear husband of mine is so amazing, he waltz in there only to get the “oh, you aren’t staying here?” question and odd look (which he hates – oh the things we do for love).  So periodically I can convince him to go get one for me, or I’ll go run in and get one.
It was amazing.
Perfect.
I savored that cookie for 2 days. 
Hehe.
